Visiting Reflections Retreat Vanuatu

We are loving being open for business again. It has been over twelve months now since we opened post COVID, and our guest numbers are slowly increasing as people are enjoying the ability to travel freely again.

Our current group of guests is having a great time. There is plenty to do, with yoga and activities every morning, and relaxing and massages every afternoon. They love our food and say that they feel like they have been here forever. Then they remember that they are leaving tomorrow and say that they are not ready to go home yet. They are already planning their return trip to Reflections Retreat.

Later this afternoon we will teach our lovely guests how to make the Protein Bread that they have been enjoying as part of their breakfast. Making Protein Bread is one of our most requested cooking demonstrations and many guests ask us to share the recipe with them. So, we have included a copy of our Protein Bread recipe in this Newsletter so that you can have a go at making it at home. Enjoy!

Protein bread recipe

5 eggs

4 tbsp. coconut oil (liquid form)

2 cups almond meal

1/4 cup chia seeds (exclude if unavailable)

1/2 tsp bi carb soda

1/4 tsp sea salt

Mix dry ingredients together, mix eggs and coconut oil together separately then add to dry ingredients.

Mix all ingredients together and place in a lined loaf tin.

Bake at 180 degrees for 40 minutes.
