Fabulous fresh food at Reflections Retreat

Updated: Dec 11, 2023

At Reflections Retreat, we pride ourselves on providing delicious, tasty, fresh food and healthy meals for guests - all our meals are freshly made each day using the best local produce.

Our menus centre around a healthy plant-based formula; at the same time we do include both meat and vegetarian/vegan options with each meal. Most of the food we serve is wheat and dairy free as well as low in free sugars. All dietary requirements are individually catered for by our in-house nutritionist.

Our philosophy is that great food is an essential component of our guest’s experience. Many people who stay with us compliment the quality of the food and often ask for one or two of their favourite recipes to take home with them! In addition, we’re happy to provide cooking demonstrations to show guests how to make our recipes.

One of the most popular menu items is our energy balls. As a treat, we include the recipe here for you. Enjoy!

Energy balls/ Chocolate balls

½ cup of almond meal/ground

¼ cup of toasted coconut/ desiccated coconut

¼ cup of blended oats

2 TBSPs of sesame seed

2 TBSPs of linseed/flaxseed

½ tsp of vanilla essence

2 TBSPs of honey

1 TBSP of coconut oil

¼ cup of Peanut butter, or enough to shape the balls

For Chocolate Balls, add ¼ cup of cacao powder.

Mix all the ingredients well together and make the desired balls.

In a plate/bowl, pour some sesame seeds in, and roll the balls over the sesame seeds.

Note: If the mixture is too dry, add more honey or peanut butter; if it’s too wet, add more oat or almond meal.

These Energy balls will keep in the fridge for three to five days. However, we store them in our freezer where they will keep for several months.
